What is Project A27?
Project A27 is a way of understanding professional artisan bakery.
We currently live in a very exiting time for the the artisan bakery world. Our work is starting to be known and appreciated and because of that now is the time to spread de knowledge an the love of bread that all artisan bakers have.
Who are we?
We are a group of bakers who are dedicated to bake, search and train in the bakery and pastry industry. We do look forward not forgetting to keep lookin at the past.
The visible faces of Project A27 are David Hoyos Arenas (Master baker since 1997 and finalist on the last Spanish Championship of Artisan Bakery) and David Galimany (Baker and assistant)

What do we do?
We work and teach the fundamentals and diversity of bread making, always using natural sourdoughs culture. We are determined to spread de word and knowledge of what we believe is Good Real Bread.
We offer courses and workshops for bread and pastries professionals and enthusiasts from around the world using the best techniques.
We conduct training for workers in private businesses with simple technical explanations, 100% practical and 100% nutritious.
What will you achieve?
At the end of each course you’ll be able to:
- Differentiate, develop and use different kinds of sourdough from a levain to poolish.
- Use a same dough in very different ways, optimizing resources and creativity.
- Flavor you bread and pastries in a way that’s conceptual, logic and practical.
- Work different methods, from direct processes to long fermentation processes (up to72 hours).
- Work and understand different types of flours currently on the market.
